Who would think that a fish place in Chicago would have the best recipe for Cuban Bread Pudding?  Found this recipe for Cuban Bread Pudding searching the internet and tried it yesterday.  It was amazing.  I used a loaf of stale cuban bread and grated it until it was basically dust.  Breaking it into small pieces won't give you the proper texture so this is an important change to the recipe.  And I didn't bother removing the crust since it all the bread was turned into dust anyway.
